Vegetarian Nutrition University Credit Course

Course Core Competencies & Learning Objectives:
At the end of this course, attendees will be able to:

pinpoint potential areas of difficulty in meeting nutritional needs, along with solutions for vegan/vegetarian and near-vegetarian clients.
conduct dietary assessment of vegetarian clients.
assist clients in meeting dietary guidelines for protein, iron, zinc, calcium, vitamin D, riboflavin, fiber, and essential fatty acids, on a plant-based diet.
assist vegetarian and vegan clients in meeting nutritional needs at all at stages of the life cycle.

Brief Outline:
Introduction and overview
Vegetarian nutrition, disease prevention and health

Fiber, Minerals, Vitamins, Phytochemicals,
Food guides and dietary assessment
Vegetarian nutrition in the growing years: guidelines for pregnancy, lactation, infancy, childhood and adolescence.
Vegetarian nutrition for seniors, Weight issues (overweight, underweight, eating disorders)
Vegetarian nutrition for athletes,
Vegetarian diplomacy: dealing effectively with challenging social situations.
Counseling vegetarian clients

Format: lecture, slides, overhead projector visual material, discussion, two potluck lunches with specific vegetarian nutrition themes, display materials and resources, use of ESHA The Food Processor Nutritional Analysis program, take-home exam, take-home nutrition analysis assignment, final exam.

Time: 22 classroom hours including 2 hours food lab, held on 3 weekend days
