Course Core Competencies & Learning
Objectives:
At the end of this course, attendees will be able to:
 | pinpoint potential areas of difficulty in meeting nutritional
needs, along with solutions for vegan/vegetarian and near-vegetarian clients. |
 | conduct dietary assessment of vegetarian clients. |
 | assist clients in meeting dietary guidelines for protein, iron,
zinc, calcium, vitamin D, riboflavin, fiber, and essential fatty acids, on a plant-based
diet. |
 | assist vegetarian and vegan clients in meeting nutritional needs
at all at stages of the life cycle. |

Counseling vegetarian clients
Format: lecture, slides, overhead projector
visual material, discussion, two potluck lunches with specific vegetarian nutrition
themes,
display materials and resources, use of ESHA The Food Processor Nutritional Analysis program, take-home exam, take-home nutrition analysis assignment, final exam.
Time: 22 classroom hours including 2 hours food lab,
held on 3 weekend days
